Effect of postharvest handling and storage on apple nutritional status using antioxidants as a model.

Beginning on 3 August, fruits were harvested at weekly intervals from Red Chief Delicious and Granny Smith trees. Some fruits were used for immediate analysis of peel antioxidants, the rest were stored at -1 deg C for 2, 4 or 6 months than transferred to 23 deg in the dark for 24 h before analysis. In Delicious, antioxidant content at harvest increased for later harvest dates, whereas for Granny Smith it remained fairly constant. At the time of commercial harvest (the last sampling date in this trial), antioxidant levels were more than 4 times greater in Delicious than Granny Smith. However, the Red Chief Delicious fruits were more mature than the Granny Smith ones at this stage, in terms of starch content. In Delicious fruits antioxidants increased 2- to 10-fold after 2 months cold storage. In Granny Smith, the increase after the same time was 10-fold. In both cultivars, antioxidant contents after 4 or 6 months' storage were lower than those after 2 months. In addition to the above, fruits of G

olden Delicious, Fuji and Braeburn, collected at the time of commercial harvest, were stored at -1 deg for 6 months and the antioxidant contents of all 5 cultivars were compared before and after storage. The results of these trials clearly demonstrated that antioxidant content varies with cultivar, harvest date and length of storage.
