Respiration, ethylene production and active oxygen metabolism of Chinese cabbage after harvest.

The changes in respiration, ethylene evolution and active oxygen metabolism of Chinese cabbages held at 25 plus or minus 0.5 deg C were studied. Rate of respiration and ethylene production showed a climacteric pattern. Activity of superoxide dismutase, and the contents of ascorbic acid and carotenoids decreased rapidly with increases in rate of respiration and ethylene production. However, content of malondialdehyde and membrane permeability increased after harvest. It was concluded that postharvest senescence of Chinese cabbages is correlated with both increasing ethylene production and the imbalance in activated oxygen metabolism.
