Effect of post-harvest storage on metabolism of phenol compounds in carrot root slices.

In experiments in 1996/97, 1-mm slices from roots of carrot cultivars Berlanda and Joba stored for 0, 2, 3 or 4 months at 5 deg C were analysed for total phenol, chlorogenic acid and isocoumarin accumulation, peroxidase and phenylalanine-ammonia-lyase (PAL) activities and ethylene evolution during 3 days aging at 20 deg . During aging, a significant accumulation of total phenols, chlorogenic acid and isocoumarin was observed, irrespective of the storage period. Wounding of roots and subsequent aging also increased peroxidase and PAL activities in most treatments. The greatest increases in metabolic activity, phenol accumulation and peroxidase and PAL activities were detected in slices from freshly harvested roots, while phenol accumulation and metabolic activity were reduced in slices stored for 3 months. It is suggested that the postharvest storage period of carrot roots used in food processing might affect the nutritional value of the product.
