Optimum harvest date and controlled atmosphere storage potential of 'Fuji' apples.

Fuji apples harvested weekly from early September to late October 1990-1994 from orchards in central Washington, USA were evaluated for maturity, and stored in 0.5, 1.0 or 2.0 kPa O2 with 0 kPa CO2 or air at 0 deg C to determine the optimum storage O2 concentration. Fruits were also stored in 0, 1, 3 or 5 kPa CO2 with 1 kPa O2 to evaluate CO2 injury susceptibility. No climacteric ethylene was detected during the investigation period. Water core developed in late-harvested fruits. Changes in starch index were more consistent than other indexes. Fruits stored in 1 kPa O2 at 0 deg had higher firmness, soluble solids content and titratable acidity than fruits in 0.5 or 2 kPa O2 or air. Low O2 in storage decreased ethylene production, and suppressed activities of 1-aminocyclopropane-1-carboxylic acid (ACC) oxidase and ACC synthase. CO2 at 3 kPa and 5 kPa caused severe internal injury. Fruits from late harvests with water core were more susceptible to CO2 injury. Fruits tended to develop core browning

 during maturation and storage, and controlled atmosphere storage minimized the disorder. The results indicate Fuji apples should be stored in 1 kPa O2 with 1 kPa or less CO2 at 0 deg .
