Postharvest activity of hydrolytic enzymes produced during sawdust-based bag cultivation of Grifola frondosa in culture waste.

Waste from the culture of G. frondosa might be recycled using the hydrolytic enzymes present in the medium. Recycling of a medium consisting of sawdust mixed with rice bran was studied. The activities of proteinases (acid and neutral proteinase), beta -N-acetylglucosaminidase and beta -1,3-glucanase in this culture waste were high, and the activities of cellulases (CM-cellulase and avicelase), xylanase and amylase were low. The activity of neutral proteinase was higher than that of acid proteinase in the fruiting bodies, but the activity of acid proteinase was higher than that of neutral proteinase in the culture waste. The activities of chitinase and beta -1,3-glucanase in the waste were about the same as those in fruiting bodies. The results suggest that combination of the 3 hydrolytic enzymes (chitinase, acid proteinase and beta -1,3-glucanase) would be of practical use for cell-wall lysis and the breakdown of biomass materials. The hydrolytic enzyme activities in the culture waste varied dep

ending on the fungal strain, so selection of a suitable strain would be important for practical application.
