Pathway and inhibition of PPO activity increase in pineapple fruit induced by low temperature.

Polyphenoloxidase (PPO) [catechol oxidase] activity and inorganic phosphate (Pi) content varied between harvested pineapple (cv. Smooth Cayenne) fruits, depending upon treatment. Acid phosphatase activity and Pi content increased in fruits subjected to low temperature treatment. Low temperature treatment slowed down the gradual decrease in phospholipase D activity which occurred during fruit ripening. The increase in PPO activity induced by low temperature treatment was reduced by treatment with abscisic acid, cycloheximide or ethanol.
