Influence of controlled atmosphere on quality and scald development of 'Red Delicious' apples.

The effects of harvest date, storage atmosphere and diphenylamine (DPA) treatment on the incidence of superficial scald in Red Delicious apples harvested in Val di Non, Italy, were assessed. In preliminary experiments in 1994, assessing the effects of DPA (1800 ppm) in fruits stored in ultra-low oxygen (ULO) storage (0.9% O2, 1.2% CO2), DPA-treated fruits developed no scald but were less firm after storage for 240 days than non-DPA-treated fruits. In fruits harvested in 1995, scald development was similar in fruits harvested at the commercial harvest date or 10 days later (145 or 155 days after full bloom, respectively). DPA treatment (1800 ppm) reduced scald development and fruits stored in ULO storage (0.9% O2, 1.2% CO2) developed less scald than fruits stored in controlled atmosphere storage (1.5% O2, 1.2% CO2) for 7 months. Scald incidence was lowest in DPA-treated fruits in ULO storage (3.34% after 7 months' storage). Fruits stored in ULO storage were firmer, sweeter and had higher titratab

le acidity than the CA-stored fruits.
