Evaluation of 'Fuji' apple ground color at harvest as a predictor of post-storage fruit quality.

Fuji apple fruits harvested on 10 and 24 October in central Washington, USA, were divided into 2 groups based on ground colour (green and breaker). The fruits were stored at 0 deg C in 9 atmospheres. Fruit quality was evaluated after harvest and storage for 8 months. Breaker fruits had higher soluble solids content and lower titratable acidity than green fruits both at harvest and after storage. Breaker fruits had less scald than green fruits after storage. There was no difference in firmness between green and breaker fruits either at harvest or after storage (firmness decreased in all fruits during air storage but did not change significantly during controlled atmosphere storage). Fruits held in 1 kPa CO2 with 0.5, 1.0 or 1.5 kPa O2 generally had more CO2 injury than those held in 0 kPa CO2 at the same O2 concentrations. An initial 3 days 0 kPa O2 (100 kPa N2) followed by 1 kPa O2 did not have any benefit compared with continuous 1 kPa O2. An initial 3 days 20 kPa CO2 followed by 1 kPa O2 resul
