Controlled atmosphere effect on water-soluble vitamins changes of green beans (Phaseolus vulgaris L.).

Green bean pods (cv. Perona) were stored for up to 22 days at 8 deg C in air or in controlled atmospheres (5% O2 + 3% CO2, 3% O2 + 3% CO2 or 1% O2 + 3% CO2). Storage in 1% O2 + 3% CO2 gave the best results. Under these conditions, pods can be stored for 11 days and still retain 91% of the initial vitamin C content without showing a significant decrease in vitamin B6 content.
