Modified atmosphere packaging: optimisation through simulation.

An integrated simulation model was developed to study the dynamics of modified atmosphere packaging (MAP). The model describes diffusion of O2, CO2, N2 and H2O through the film as a function of time and temperature. The film-specific transmission rates are assumed to be temperature-dependent conforming to Arrhenius. The gas exchange of the product is described using a physiological based model as a function of O2 and CO2, with a temperature dependence conforming to Arrhenius. Both O2-consumption and oxidative and fermentative CO2-production are modelled. An existing model on keeping quality was modulated based on relative respiration. The water-balance includes transpiration and formation of condensate. It is suggested that the MAP model can be used to optimize MA packages and to solve problems arising from practice, which are usually solved by trial and error.
