Analysis of the mechanical damage of products in lines for grading and packaging apples.

Studies were carried out in Ravenna, Italy, to analyse the damage caused to apples during postharvest grading and packaging. The calibrating machine and weighing/packaging machine did not cause damage to the fruits which would be noticed by the consumer. Even in the case of Stark Delicious, which was more sensitive than Golden Delicious, the bruising was nearly completely eliminated by peeling the fruit. Overturning of the fruits, in contrast, could cause bruising of the pulp, noticeable by the consumer on a significant percentage of commercial fruits. It is concluded that most defects to apples are caused during harvesting in the field and transport to the cooperative, rather than by maltreatment suffered during grading and packaging.
