Postharvest management in bulb-producing vegetables. Conditions for the artificial drying of garlic.

Natural drying of garlic bulbs is a very practical and economic in dry and warm regions, but losses are significant whereas artificial drying is rapid, safe and more effective. The stages of the drying process and the factors affecting its rate are reviewed. The combined use of organoleptic and biochemical characteristics is considered for assessment of progress during drying under different conditions of management and climate. The various types of drier based on natural and forced circulation of air are described and the effects of variation in drying conditions on the quality of drying and subsequent storage are discussed.
