บทคัดย่อ

The characteristics of polyphenol oxidase and control of browning in pear (Pyrus pyrifolia Nakai) and lotus (Nelumbo nucifera Gearte).

The characteristics of polyphenol oxidase [catechol oxidase] from pear and lotus tissue, such as reaction rate, substrate concentration and optimum temperature and pH, were investigated. Studies showed that 0.25% sodium thiosulfate and 0.1% vitamin C [ascorbic acid] might be effective for controlling browning in pear and lotus during storage and transport.
