Effect of temperature on ethylene production and active oxygen metabolism of Chinese cabbage after harvest.

Chinese cabbages were held at 20 plus or minus 1, 10 plus or minus 1 or 5 plus or minus 1 deg C after harvest. Those at the highest temperature showed a climacteric pattern of ethylene production and the activities of superoxide dismutase (SOD) and catalase (CAT) decreased rapidly, whereas the rate of superoxide radical production, malondialdehyde content and membrane permeability increased. At the lower temperatures, there was no climacteric rise in ethylene production, higher rates of SOD and CAT activity were maintained, and the rate of superoxide radical production, malondialdehyde content and membrane permeability were lower. Imbalance in active oxygen metabolism may be the factor which triggers senescence of Chinese cabbage leaves after harvest.
