บทคัดย่อ

The study on pomegranate husk scald during storage.

The factors influencing development of husk scald of pomegranate fruits during storage are reviewed. They include storage temperature, relative humidity, atmosphere composition, harvest time, polyphenol oxidase [catechol oxidase] activity and o-dihydroxyphenol content in the husk. There appears to be a critical period during storage when husk scald occurs.
