Postharvest diseases of fruit and vegetable crops: state and development (third part).

The processes involved in the repair of damaged plant tissues after harvest are described, and the involvement of natural biocides in natural and induced resistance to microbial infections in postharvest fruits and vegetables is discussed. The various physical methods available for the protection of postharvest fruits and vegetables (refrigeration, modified atmosphere, controlled atmosphere, heat treatment, low environmental pressure, ionizing radiation and hydrotherapy) are described.
