Present status and future prospects of post-harvest technology of vegetables.

Total losses of vegetables in India due to inadequate postharvest handling, transport and storage are estimated at 20-25%. Pre- and postharvest treatments applied to vegetables in India to reduce postharvest losses are outlined. These include cultural practices, harvesting considerations, curing, precooling, washing, grading, sorting, packaging, transport, storage, irradiation and processing. Storage structures, used mainly for potatoes and onions, are described (cool stores, pits, a zero energy cool chamber, forced evaporation cool stores, a 2-tier onion storage structure and a bottom-ventilated onion store).
