Controlled atmosphere storage of fruits and vegetables: recent advances and perspectives.

The physiological characteristics of fresh horticultural produce and the main factors affecting storability are described. Controlled atmosphere storage techniques are discussed, stressing the effects of rapid introduction into controlled atmospheres, high CO2 concentrations, ultra-low-oxygen storage and ethylene removal (scrubbing).
