Effect of ethephon treatment on cell wall release and softening in rin-tomato fruits during postharvest ripening.

Mature, green fruits of normal and rin tomatoes were harvested and placed at room temperature. Rin fruits were sprayed with ethephon (1000 ppm) immediately after harvest. At stage III (initiation of yellow colour in rin fruits; normal fruits red) the hardness of ethephon-treated rin fruits was lower than that of vine-attached rin fruits, but the ethephon-treated fruits did not soften as much as normal fruits. Vine-attached rin fruits hardly softened after harvest (even after 20 days at room temperature). Ethephon-treated rin fruits produced larger amounts of water-soluble pectin than untreated and vine-attached rin fruits; vine-attached rin fruits had the lowest amount of water-soluble pectin. Little difference in the amount of EDTA-soluble pectin was observed between normal and rin fruits; rin fruits contained higher amounts of pectinase-soluble pectin than normal fruits. Normal fruits and ethephon-treated rin fruits had low amounts of cell wall bound Ca2+, Mg2+ and K+ in pericarp tissues. It i
