Effect of temperature and relative humidity on fungal deterioration of banana fruits.

The effect of temperature and relative humidity (RH) on the development of banana rots caused by Aspergillus niger, A. flavus, A. fumigatus, Cochliobolus lunatus and Colletotrichum musae was investigated. Fresh and apparently healthy bananas were surface sterilized, inoculated with the test fungus and stored at different temperatures (10, 25 and 30 deg C) and RH levels (40, 70 and 100%). The results indicated that as the storage temperature rose to 25 deg C there was an increase in activity of the test fungi resulting in a greater percentage infection. A further increase in storage temperature to 30 deg C, however, resulted in reduced infection. Similarly, there was an increase in infection with increasing RH levels. All the test fungi caused complete decay of banana fruits at 100% RH.
