บทคัดย่อ

Processing of vegetables as an agribusiness enterprise.

Vegetables are perishable and have extremely short shelf lives. Processing is useful in dealing with seasonal production surpluses. In addition to preserving vegetables, processing also generates new products. In Bangladesh, the demand for processed vegetables is low because fresh vegetables are available throughout the year. Presently, processing of vegetables as an agribusiness enterprise has little potential. New products developed from processed vegetables, have, however, created a demand among the urban and semi-urban population. These products are mainly concentrates, generally produced in traditional cottage-industry type factories.
