Preliminary analysis on mechanism of fruit and vegetable preservation using electrostatic field.

The following aspects on the role of electrostatic fields in fruit and vegetable preservation are presented: (1) the transmembrane potential is changed by the extra electric field, so affecting the metabolism; (2) the electric field around fruits and vegetables has an influence on the respiratory system, therefore, oxidation and reduction functions within an organism are slowed down; (3) an external energy field causes a resonant response in water molecules, altering the combination status of water and enzymes, resulting in the inactivation of enzymes.
