Control of senescent spots in 'Kluai Khai' by modified atmospheres.

Hands of banana cv. Kluai Khai fruits at colour index 4-5 (yellow peel with green tips) were individually placed into sealed polyethylene (PE) bags with 1, 2 or 3 perforations (0.4-cm diameter) and left at ambient temperature. Development of senescent spots was inhibited in sealed PE bags, while control fruits (in plastic boxes covered with PE bags) showed serious development of senescent spots. Polyphenol [catechol] oxidase (PPO) activity and total phenolics in the peel in sealed PE bags were greater in controls. This suggests that PPO may not function as a rate-limiting factor in the development of senescent spots in Kluai Khai bananas and that modified atmospheres may prevent the development of senescent spots by disrupting the pathway of the phenolic metabolism rather than by inhibiting the synthesis of phenolic compounds.
