Description of postharvest management and factors for rejection in pineapple (cv. Smooth Cayenne and clone Champaka) for export from the northern region of Costa Rica.

During the course of 10 visits to 4 pineapple export packing stations in northern Costa Rica between July 1991 and January 1992, time and motion studies were undertaken to analyse the efficiency of postharvest management at each stage and the effect of handling on final quality of fruit. Total losses during the period at the 4 packing stations ranged from 15% to 26% with partial mechanization tending to reduce losses. The principal causes of fruit rejection were over-ripeness, incidence of gummosis, suboptimal size or fruits with an abnormal neck. On the basis of samples of cv. Smooth Cayenne and clones Champaka studied during these investigations the range and significance in terms of fruit quality are considered of internal parameters including percentage of soluble solids and titratable acidity, pH, firmness, translucence and porosity of the flesh.
