Studies on innovation of brown rice drying (Part 2). Characteristics of brown rice drying using circulating type dryer.

 

Some experiments of brown rice drying were carried out using a circulating type drier, developed on the basis of fundamental characteristics of brown rice drying previously established. Electricity consumption for brown rice drying was reduced to less than half that of conventional rough rice drying. More cracking occurred at higher initial drying rates. There was a linear relation between the degree of skin damage and the initial moisture content of the brown rice. In the palatability test, there was no difference in rice taste between brown rice drying and rough rice drying. Therefore, it is concluded that, with some improvement in quality, the conventional circulating type drier can be used for brown rice drying, thus achieving energy saving and cost reduction in rice postharvest operations.
