บทคัดย่อ

Physiology of lightly processed fruits and vegetables.

 

The consequences of wounding (ethylene synthesis induction, membrane lipid degradation, elevated respiration, oxidative browning, wound healing, secondary metabolites and water loss) and variables affecting tissue response to wounding (species and cultivar, physiological maturity, severity of wounding, temperature, water vapour pressure deficit, atmospheric composition and chemical treatments) are reviewed in relation to lightly processed fruits and vegetables.
