บทคัดย่อ

Biochemical mechanism of the firmness changes of kiwifruit treated by CaCl2.

 

Softening in kiwifruits (cv. Hayward) during storage occurred in 2 stages. The first stage was a rapid softening which was unaffected by postharvest treatment with 5% CaCl2, followed by a slow softening which was reduced by CaCl2. Polygalacturonase activity was reduced by CaCl2, leading to less degradation of protopectin, a smaller increase in water-soluble pectin and firmer fruits.
