บทคัดย่อ

A study on the postharvest granulation of 'Huyou' fruit.

 

During storage of Huyou (Citrus) [species not specified] fruits, superoxide dismutase (SOD) activity in the peel decreased during the first 60 days of storage, then increased to more than the original level, while in the juice SOD activity increased then declined. Peroxide (POD) activity in the peel increased up to 60 days, then declined slightly, while in the juice there was little activity and this remained almost unchanged. As SOD activity increased in the peel and declined in the juice (120-130 days of storage), incipient granulosis developed in the juice sacs. The soluble sugars declined in both peel and juice during storage but the decrease was greater in the latter. GA3 (100 mg/kg) treatment lowered SOD and POD activities in the peel, delayed the peak activity of SOD in the juice, increased juice soluble sugar content and reduced the incidence of fruit granulosis.
