Quality changes during handling and transportation of white asparagus shipped by refrigerated trucks from Greece to Germany.

 

White asparagus spears were shipped, during the spring of 1992, from Galatades, Greece to Munich, Germany, in 4 refrigerated trucks. Quality was evaluated immediately after harvest, after grower handling, after packing-house handling, on arrival at the wholesale market in Munich and at the retail outlets. Total weight loss was high, in some cases unacceptably so (>8%). The highest weight loss per day occurred at the wholesale market and during distribution to the retail outlets, probably due to the higher temperatures during that stage. Anthocyanin synthesis progressed rapidly after harvest, the purple colour appearing in the top 3 cm of the spears and reducing quality. Toughening of the apical spear segments occurred during grower handling and even faster at the wholesale market until distribution to the retail outlets. Toughening of the middle spear segments started during packing-house handling or later during transport.
