Ripening associated changes in enzymes and respiratory activities in three varieties of mango (Mangifera indica L.).

 

Studies with the mango cultivars Dashehari, Amrapali and Rataul indicated that during postharvest ripening of fruits at room temperature (26 deg C), there was considerable variation between cultivars in respiration rate, loss in FW, sugar content and activities of enzymes associated with ripening such as pectin methyl esterase [pectinesterase] and polygalacturonase. A rise in climacteric respiration rate coincided with the highest level of sucrose and polygalacturonase activity. The highest rate of respiration was noted in Amrapali and the lowest in Dashehari.
