บทคัดย่อ

Effect of temperature and humidity on microbial deterioration of banana fruits.

 

Banana cultivars Ripe Chinia and Malbhog inoculated with Helminthosporium spiciferum [Cochliobolus spicifer], Curvularia lunata [Cochliobolus lunatus] and Trichothecium roseum exhibited an increase in severity of infection with rise in temperature and RH. The maximum deterioration or spoilage of fruit pulp was recorded with C. lunatus at 30 deg C and 96% RH in both varieties.
