บทคัดย่อ

Composition of cell-wall polysaccharides during fruit softening in 'Tonewase' Japanese persimmon.

 

After treatment to remove astringency, persimmon (cv. Tonewase) fruits grown under cover softened more rapidly (at 20 deg C) than fruits grown in the field. Changes in the concentration of soluble polyuronides were not related to softening in fruits grown under cover or in the open. The concentration of total hemicellulose in the cell walls decreased during softening of fruits grown in the open.
