Change of sugar content in chestnut during low temperature storage.

 

Changes in sugar content and enzyme activities involved in starch degradation were monitored in 5 Japanese chestnut (Castanea crenata) cultivars during cold storage (1 deg C). Sucrose was the main storage sugar detected; other sugars were hardly detected. At the beginning of storage, sucrose contents were lower in the early maturing cultivars (Tanzawa and Kunimi) than either the mid-season cv. Ginyose or the late cv. Ganne. An F1 hybrid between Japanese and Chinese chestnuts, cv. Riheiguri, had the highest initial sucrose content. Sucrose content increased and starch content decreased during storage, most notably in the early cultivars. Phosphorylase and neutral and acidic invertase activities remained constant but beta -amylase activity tended to increase during storage.
