Determination of the water sorption isotherms of oyster mushroom (Pleurotus ostreatus) at 25 deg C.

 

Determination of water sorption isotherms using the standard static gravimetric method is presented for oyster mushroom at 25 deg C. Three two-parameter equations (BET, Oswin and Caurie) were compared to experimental curves. The BET equation gave the best fit. The curves obtained were sigmoidal in shape, characteristic of most foods.
