บทคัดย่อ

The effect of low pH solutions, following SO2 treatment, on peel colour, fruit decay and sulphur residues in the pulp of litchi fruits after cold storage.

ABSTRACT :

 

Fruits of the HLH Mauritius and Red McLean (Madras) cultivars were treated with low pH solutions of 0.25, 0.5 or 1.0% citric, hydrochloric (HCl) or nitric (HNO3) acid, after the normal postharvest SO2 treatment. The external colour of such fruits after 30 days storage at 2 deg C was superior to that of fruits treated only with SO2. Fruits of cv. Madras treated with HCl developed a full red colour. Complete control of postharvest decay was obtained in all treatments. Sulphur residues in the flesh of fruits from all treatments were mostly below the permitted maximum level of 10 p.p.m., except with the 1% HNO3 treatment of HLH Mauritius fruits, which resulted in a residue level of 219.11 p.p.m. No unacceptable flavours or after-tastes were evident with any of the treatments.
