Extension of mushroom (Agaricus bisporus) shelf life by gamma radiation.

ABSTRACT :

 

Fresh mushroom sporophores were placed in trays and covered with PVC film. Forty-eight packs were irradiated by a gamma -source with a dose of 3 kGy, and the remaining 24 were not treated (controls). Both treated and control packs were subsequently stored at 10 plus or minus 2 deg C and 94 plus or minus 6% RH. After storage, mushrooms were subjected to quality assessments and taste panel-testing, both raw and when cooked. Irradiated sporophores had a longer shelf life than control samples, with less browning and a delay in cap opening. Desiccation was delayed and stipe elongation reduced such that irradiated mushrooms were still acceptable for consumption 16 days after treatment. No deleterious effects of irradiation at this relatively low level were observed.
