Changes in the activity of oxidative enzyme and the levels of peroxides in the flesh and core of Yali pears.

ABSTRACT :

 

Pyrus bretschneideri cv. Yali fruits were stored at 16 plus or minus 2 deg C and RH 90-95%. After 65 days from harvest, the fruit core became brown. The activity of ascorbic acid oxidase in the core was 10 times higher than that in the flesh, whereas the converse was found for catalase activity. When assessed 18-45 days after harvest, the catalase activity in the core was zero, while the activities of polyphenol oxidase [catechol oxidase] in the core and flesh showed no notable changes during the storage period. The content of peroxides in the core was higher than that in the flesh, but as the duration of the storage period was extended the contents of peroxides in both tissues decreased.
