Effects of lipoxygenase on the postharvest physiology of tomato fruit.

ABSTRACT :

 

Lipoxygenase activity was monitored in pericarp slices of tomato fruits (cv. Zhongshu 4) at 4 different stages of ripening. Activity increased from the mature-green stage to the turning stage then decreased from the pink to the red stage. No activity was detected in over-ripe fruits. When lipoxygenase was added to the fruit tissue there was no increase in ethylene production but the conductivity of the incubation medium increased. This increase was reversed by the addition of DHN (1,5-dihydroxynaphthalene), a lipoxygenase inhibitor. When intact fruits were treated with ethylene there was a significant increase in lipoxygenase activity. It is concluded that an increase in the activity of lipoxygenase requires the biosynthesis of endogenous ethylene or the application of exogenous ethylene.
