Studies on maintaining postharvest quality of yard-long beans.

ABSTRACT :

 

Changes in quality and their relationship with respiration rate were studied in yard-long beans (Vigna sesquipedalis [V. unguiculata subsp. sesquipedalis]). The beans were stored at various temperatures (10.0, 7.5, 5.0 or 0 deg C), either continuously or with interruptions at 15 deg (12 h every 3 or 6 days) for 6, 12 or 18 days. Respiration rate was highest at 10 deg and was associated with seed development, while respiration at the lower temperatures increased gradually during storage. Storage at 0 or 5 deg resulted in better sensory quality after 6 and 12 days than storage at higher temperatures, and continuous storage was better than intermittent warming. After 18 days, quality was highest with continuous storage at 0 deg . There were no symptoms of chilling injury in beans stored at 0 deg for 12 days.
