Modelling colour of tomatoes during postharvest storage.

ABSTRACT :

 

Tomato fruits (cv. Momotoro) at 4 colour stages (ranging from green to pink) were stored at 10, 15, 20, 25, 30 or 35 deg C. Fruits were removed at daily intervals for colour measurement. A mathematical model was developed describing the behaviour of tomato fruit colour at different storage temperatures and harvest maturity stages. The mathematical description used in the model is a logistic (sigmoid) function with a correction for the actual biological age of the fruit. Accuracy in prediction of colour development was highly dependent on the stage of maturity. For fruits in the early breaker stage, prediction of colour and keeping quality was possible. At the mature green stage, however, prediction was inherently less accurate. Dynamically changing storage temperatures can be applied in the model by using the integration of the partial derivative.
