Influence of different storage conditions on the evolution of the maturity of nectarines.

ABSTRACT :

 

Ripening of nectarine fruits (cv. Stark Red Gold) was monitored during storage at 18 or 2 deg C and 90, 75 or 50% RH. Weight loss and firmness were measured using a non-destructive acoustic impulse response and this was compared with a destructive compression test. High RH reduced weight loss as did lower temperatures. The correlation between the 2 methods of measuring firmness was not high, possibly due to measurement errors. A model for predicting weight loss at certain temperatures and RH was derived using regression analysis.
