Ethylene, CO2 and aroma volatiles production by apple cultivars.

ABSTRACT :

 

In 1988, ethylene, CO2 and aroma volatile production was monitored in fruits of 28 apple cultivars after 30-60 days' cold storage. This was repeated in 1990 but the fruits were sampled immediately after harvest. CO2 production rates ranged from 5.3 to 14.9 ml kg-1 h-1 and ethylene production rates ranged from 2 to 220 micro l kg-1 h-1. There was some relationship between CO2 and ethylene production rates in most cultivars but the relationship between CO2 and aroma or ethylene and aroma was less clear.
