Flavour changes in strawberries packed in modified atmospheres.

ABSTRACT :

 

Ripe Elsanta, Elvira and Pandora strawberries were packed in 3 commercial films, viz. 19 micro m BDF (low permeability), 19 micro m MRX (high permeability) and 40 micro m, to give a range of modified atmosphere (MA) conditions. During storage, O2 levels reached 0.5, 1.0 and 1.0% and CO2 levels reached 45, 20 and 11%, respectively. All the MA films produced strong off-flavours and, due to the anaerobic conditions, acetaldehyde, ethanol, ethyl acetate and other esters increased while hexanal and trans-hexanal decreased. The off-flavour was most strongly associated with ethyl acetate.
