Effect of temperature and light on the texture of stored white asparagus spears.

ABSTRACT :

 

Spears of the asparagus double hybrid Larac were stored for 6 days in air at 2.5, 5.0, 10.0, 15.0, 20.0 or 25.0 deg C under continuous light or in the dark. Fibre content and toughness were measured at the tip, middle and basal ends of the spear. The fibre content and toughness of the apical segment and toughness of the middle segment increased during storage at temperatures above 2.5 and 5.0 deg , respectively. There was no change in toughness of the basal segment with increasing temperatures. Between 10 and 20 deg , spears stored in the dark had more fibre than those stored in the light. Spears stored in the dark at temperatures <10 deg had tougher heads than those in the light, but the opposite was observed at higher temperatures (>15 deg ).
