Storage losses in fresh asparagus (Asparagus officinalis L.).

ABSTRACT :

 

Asparagus spears have a high water content (94%) and water loss can be rapid (2.2% in 24 h at 20-22 deg C and 65-70% RH) once they are cut. CO2 production and evaporation were studied in spears during storage at 6 deg and 80% RH. The spears were wrapped in wet paper, or stored in plastic bags or freshpack. After 4 days of storage, spears wrapped in paper had lost 9.23% weight, increasing to 12.2% after 7 days. Spears stored in plastic bags had no weight loss. Transpiration rate and water loss were greatest in the tip. CO2 production was also higher in the tip than in the mid-stem or the basal part. Overall, good results were obtained with plastic bags and wet paper wrapping. Freshpack was less good.
