Quality evolution of asparagus (Asparagus officinalis L.) as affected by storage.

ABSTRACT :

 

Asparagus has a short harvesting season but demand is year-round. The cultivar Braunschweig was evaluated in trials to extend the deep-freezing potential of asparagus. The texture of head and spear, cleaning loss, effect of blanching and freezing and changes in plant tissues were studied. Cleaning losses were up to 27% out of which the skin accounted for 78%. This cultivar was found suitable for freezing. Spears which were rejected for the fresh market were found suitable for processing. The NO3 content of processed spears was considerably less than that of fresh spears. Green spears had higher solids and raw protein content but white spears had a higher fibre content.
