Structural and chemical changes of pear skin.

ABSTRACT :

 

The skin of pear fruits (cultivars Hardenpont [Glou Morceau] and Nemes Krasszan) was studied using scanning electron microscopy. The amount and type of cracking of cuticular wax varied between the cultivars but this was not affected by gamma irradiation or Ca treatment. The cells below the skin varied in size and shape between cultivars. Irradiation caused a collapse in the cell structure while Ca treatment helped preserve the structure. Softening of the fruits due to irradiation (2.5 kGy) was less than that which occurred during normal storage. Irradiation (1.0 kGy) also caused the mobilization of Ca towards the skin in Nemes Krasszan but not in Hardenpont. The changes in texture correlated well with the ultrastructural changes.
