Effect of low temperature on some physiological and ultrastructural changes of sweet pepper, eggplants and pod beans.

ABSTRACT

Exposure of harvested sweet peppers (cv. Galben Superior), eggplants [aubergines] (cv. Bucurestene) and pod beans [Phaseolus vulgaris] (cv. Amboy) to temperature stress (0-3 deg C) for 10 days caused surface pitting and depressions. In these areas, epidermal and hypodermal cells were altered, the plasmalemma and tonoplast were broken and the cell contents were electron-dense. Respiration rate, electrolyte leakage, tissue conductivity and DM were lower in samples affected by chilling injury compared with samples held at 10 deg . The acidity of the cell sap increased during exposure to temperature stress.
