Influence of CO2 shock treatment and ULO storage on apple quality.

ABSTRACT

Golden Delicious apple fruits were held in 15% CO2 for 20 days prior to storage under ULO conditions (1.5% O2 and 1.5% CO2) for 5 months. The CO2-treated fruits retained a better green skin colour during storage due to inhibition of carotenoid production. Fruit firmness after storage was best in fruits subjected to CO2 pretreatment. Titratable acidity was not affected by CO2 pretreatment but ethanol production was greater due to anaerobic respiration during the treatment.
