Relationship between physiological and biochemical parameters in avocado fruits stored at chilling temperature.

ABSTRACT

Respiration and ethylene production rates were markedly reduced when avocado fruits (cv. Hass) were stored at 3 deg C compared with storage at 20 deg . There was no climacteric and very little fruit softening at 3 deg . External symptoms of chilling injury (pitting and browning of the skin) were observed after 3 weeks' storage at 3 deg . Storage at 20 deg produced increases in 15.8, 21.0, 23.5 and 25.8 kDa polypeptides and decreases in 18.2, 23.0 and 24.0 kDa polypeptides but these changes were not observed in fruits stored at 3 deg . It is proposed that differential degradation and synthesis of these polypeptides could be involved in the ripening process.
